Espresso is the foundation of most café beverages, from cappuccinos to lattes to americanos. Learning to master the machine and the process of extraction is essential for any barista. What Makes Espresso Unique?

More Than Just Strong Coffee

Espresso isn’t simply a stronger version of brewed coffee. It’s a distinct method of extraction that uses pressure, fine grind, and short brew time to create a highly concentrated drink. Typically, a shot of espresso is made by forcing hot water at 9 bars of pressure through finely ground coffee for 25–35 seconds, producing a small but powerful 25–40ml beverage.

This method captures a range of flavors—sweet, acidic, bitter—in a dense and creamy liquid topped with a layer of crema, the golden foam created by emulsified oils and carbon dioxide. The complexity and intensity of espresso make it both rewarding and challenging to prepare.

The Espresso Standard

A typical espresso recipe might look like this:

  • Dose: 18–20g of finely ground coffee
  • Yield: 36–40g of espresso liquid
  • Time: 25–30 seconds
  • Temperature: 90–96°C (195–205°F)

These numbers serve as a guideline, but dialing in espresso requires constant attention and adjustment. Every coffee behaves differently, and every machine responds to variables in its own way.

To consistently pull excellent espresso, you need to understand and control five key variables:

1. Grind Size

Espresso requires a very fine grind, similar to powdered sugar. Too coarse, and the water will flow too quickly, resulting in under-extraction—sour, thin, and hollow. Too fine, and the shot may choke or drip slowly, leading to over-extraction—bitter, dry, and heavy.

2. Dose and Yield

  • The dose is the amount of dry coffee in the portafilter.

Maintaining consistent dose and yield ensures balanced strength and body. We typically aim for a 1:2 ratio—for example, 18g in, 36g out. However, this can be adjusted depending on the bean’s origin and roast profile.

3. Brew Time

Brew time is the total duration of extraction, usually between 25 and 30 seconds. It’s a key indicator of how the grind and dose are performing together. If your shot runs too fast or too slow, you’ll need to adjust grind size or dose to bring it into range.

4. Water Temperature

Hot water temperature affects how efficiently flavors are extracted. Most espresso machines are calibrated within the 90–96°C range. Higher temperatures increase extraction (and risk bitterness), while lower temperatures emphasize brightness but can leave the shot feeling thin.

For darker roasts, a lower temperature (90–92°C) often helps reduce bitterness. For lighter roasts, a higher range (94–96°C) may be necessary to bring out sweetness and body.

5. Tamping Pressure and Evenness

Tamping compresses the coffee bed, creating resistance for even water flow. The goal isn’t to tamp with excessive force—it’s to tamp evenly and consistently. An uneven tamp causes channeling, where water finds weak spots and flows unevenly, producing an imbalanced shot.

We teach baristas to focus on form and technique: level the bed, apply firm pressure, and keep the tamper straight. Over time, this muscle memory contributes to reliable, repeatable results.

Reading the Shot: Visual and Sensory Cues

What to Look For

Learning to “read” a shot of espresso is one of the most valuable barista skills. The way the coffee flows, the color changes, the way the crema settles—all give you information about how the shot was extracted.

  • Even flow: A good shot flows like warm honey—steady, smooth, and centered.
  • Color transition: It starts rich and dark, lightens to golden-brown, then finishes with a tiger-striped crema.
  • Crema: Should be thick, persistent, and even. Pale or broken crema can indicate over-extraction or channeling.

Tasting for Feedback

Beyond visuals, taste is the final judge. A balanced espresso will present brightness, sweetness, and bitterness in harmony, with no single element overpowering the others.

  • Under-extracted: Sour, salty, thin, lacking sweetness.
  • Over-extracted: Bitter, dry, burnt, lingering unpleasantly.
  • Well-extracted: Sweet, round, with clear notes and a pleasant finish.

We train baristas to taste regularly and adjust variables based on flavor. The espresso machine may show you numbers, but your palate is the most important tool you have.

Every espresso machine has its own temperament. Understanding your machine—its temperature stability, pressure profile, and recovery time—helps you use it more effectively.

  • Purge the group head before every shot.
  • Backflush the machine daily with water, and regularly with espresso cleaner.
  • Wipe steam wands immediately after use to prevent milk build-up.
  • Clean portafilters and baskets throughout service to avoid old coffee oils impacting flavor.
